the fat that covereth the inwards
on Leviticus 3:3-5
The parts claimed are inward parts nobody sees, the fat over the entrails, the two kidneys with the fat by the flanks, and the caul above the liver. Verse 5 lays them on the burnt sacrifice already burning, so the peace offering goes onto a fire the daily offering lit. It is called a sweet savour, a phrase that falls sixteen times in Leviticus and never once on the sin offering or the trespass offering.

The great sacrifice of peace, that of the Lamb of God which takes away the sins of the world, prepares the altar for our sacrifices of praise, which are not accepted till we are reconciled. Now the burning of this fat is supposed to signify, (1.) The offering up of our good affections to God in all our prayers and praises.
